For the cream cheese frosting:

- 16 oz cream cheese, softened

- 1/2 cup unsalted butter, softened

- 4 cups powdered sugar

- 1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, sift together the flour, sugar, baking soda, cocoa powder, and salt.

3. In a separate bowl, beat the eggs, then add the vegetable oil, buttermilk, vinegar, vanilla extract, and red food coloring. Mix until well combined.

4. Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth and well combined.

5. Divide the batter evenly between the prepared cake pans. Tap the pans on the counter to remove any air bubbles.

6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

8. While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla extract and beat until creamy and well combined.

9. Once the cakes are completely cool, spread a layer of cream cheese frosting on top of one cake layer. Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.

10. Optional: decorate the cake with red velvet cake crumbs or additional red food coloring for a marbled effect.

11. Slice and serve your delicious red velvet cake. Enjoy!
