Panjeeri is a traditional South Asian sweet dish that is often prepared during special occasions, such as festivals, childbirth, or as a postpartum recovery food. It is known for its nutritive value and is believed to have healing properties. Here's a detailed recipe to make panjeeri:

Ingredients:


- 1 cup whole wheat flour (atta)

- 1 cup semolina (sooji/rava)

- 1 cup ghee (clarified butter)

- 1 cup granulated sugar or jaggery (adjust to taste)

- 1/2 cup mixed nuts (almonds, cashews, pistachios), coarsely chopped

- 1/4 cup melon seeds (magaz)

- 1/4 cup desiccated coconut

- 1/4 cup raisins

- 1/2 tsp cardamom powder

- 1/4 tsp nutmeg powder

- 1/4 tsp fennel seeds (saunf)

- Optional: Edible gum (gond), fried and crushed (1-2 tbsp)

Instructions:

1. Heat a heavy-bottomed pan or kadai over low-medium heat. Add the whole wheat flour and semolina. Dry roast the mixture, stirring constantly, until it turns aromatic and changes color slightly. Be careful not to burn it. This process may take around 10-15 minutes. Remove the roasted mixture from the pan and set it aside.

2. In the same pan, heat the ghee over low heat. Add the coarsely chopped nuts and melon seeds. Sauté them until they turn golden and aromatic.

3. Add the desiccated coconut to the pan and continue to sauté for a few more minutes until it turns light golden.

4. Now, add the raisins and continue to sauté for a minute until they plump up.

5. Lower the heat and add the roasted whole wheat flour and semolina mixture back into the pan. Mix everything well to combine.

6. Add the sugar or jaggery to the pan, along with cardamom powder, nutmeg powder, and fennel seeds. If using edible gum, add it at this stage as well.

7. Mix everything thoroughly and continue to cook the mixture on low heat for another 10-15 minutes. The panjeeri should turn slightly darker in color and should be aromatic.

8. Turn off the heat and let the panjeeri cool down to room temperature. It will also firm up as it cools.

9. Once cooled, store the panjeeri in an airtight container. It can be kept at room temperature for a few weeks.

Panjeeri is usually served as a postpartum recovery food for new mothers due to its high nutritional content, but it can also be enjoyed as a delicious and nutritious sweet treat.
