Ingredients:

- 1 kg fresh carrots, peeled and grated

- 1 liter full-fat milk

- 1 cup sugar (adjust to taste)

- 1/2 cup ghee (clarified butter)

- 1/2 cup mixed nuts (almonds, cashews, pistachios), chopped

- 1/2 tsp cardamom powder

- A pinch of saffron (optional)

- 2-3 tbsp khoya (reduced milk solids) - optional

- Raisins for garnish (optional)

Instructions:

1. In a heavy-bottomed pan or kadai, heat the ghee over medium heat. Add the grated carrots and sauté them for a few minutes until they start to soften and release their aroma. This process may take around 10-15 minutes.

2. Once the carrots have softened a bit, add the full-fat milk to the pan. Bring the mixture to a boil, then reduce the heat to low and let it simmer. Stir the mixture occasionally to prevent the milk from sticking to the bottom of the pan.

3. Continue to simmer the carrot-milk mixture until the carrots are cooked and the milk has reduced significantly, and the mixture has thickened. This process may take around 45-60 minutes. Stir the mixture occasionally during this time.

4. Once the mixture has thickened, add the sugar and mix well. Continue to cook the halwa on low heat until the sugar dissolves and the mixture thickens further. This may take another 15-20 minutes.

5. If using saffron, dissolve it in a tablespoon of warm milk and add it to the halwa for a rich, aromatic flavor.

6. Add the cardamom powder and khoya (if using) to the halwa and mix well. The khoya adds a rich, creamy texture to the halwa.

7. In a separate small pan, heat a little ghee and roast the chopped nuts until they turn golden. Add the roasted nuts to the halwa and mix.

8. Turn off the heat and let the Gajar ka Halwa cool for a few minutes.

9. Garnish the halwa with more chopped nuts and some raisins if desired.
