Ingredients:

For the cake:

- 2 3/4 cups all-purpose flour

- 1 tablespoon baking powder

- 1/2 teaspoon salt

- 1 cup unsalted butter, softened

- 2 cups granulated sugar

- 5 large eggs

For the frosting:

- 1 cup unsalted butter, softened

- 4 cups powdered sugar

- 1/4 cup coconut milk

- 1 teaspoon vanilla extract

- 2 cups shredded sweetened coconut (for garnish)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.

4. Beat in the eggs, one at a time, then stir in the vanilla extract.

5. Gradually add the flour mixture to the wet ingredients, alternating with the coconut milk, beginning and ending with the flour mixture. Mix until just combined.

6. Gently fold in the shredded coconut.

7. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

9. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

10. While the cakes are cooling, prepare the frosting. In a mixing bowl, beat the butter until creamy. Gradually add the powdered sugar, coconut milk, and vanilla extract, mixing until smooth and fluffy.

11. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of frosting over the top, then repeat with the second layer. Place the final cake layer on top and frost the entire cake with the remaining frosting.

12. Press the shredded coconut onto the frosted cake, covering the top and sides.

13. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
