Ingredients:

For the cake:

- 1 3/4 cups all-purpose flour

- 2 cups granulated sugar

- 3/4 cup unsweetened cocoa powder

- 1 1/2 teaspoons baking powder

- 1 1/2 teaspoons baking soda

- 2 large eggs

- 1 cup whole milk

- 1/2 cup vegetable oil

- 2 teaspoons vanilla extract

- 1 cup boiling water

For the cherry filling

- 2 cups pitted cherries

- 1/2 cup granulated sugar

- 1 tablespoon cornstarch

- 1/4 cup water

For the whipped cream

- 2 cups heavy whipping cream

- 1/2 cup powdered sugar

- 1 teaspoon vanilla extract

For the assembly

- 1/2 cup cherry liqueur or cherry brandy

- 1/2 cup chocolate shavings

- Maraschino cherries for garnish

Instructions:

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.

4. Gradually stir in the boiling water until the batter is smooth.

5. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

6. While the cakes are baking, prepare the cherry filling by combining the cherries, sugar, cornstarch, and water in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool.

7. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

8. Once the cakes are cooled, use a serrated knife to level the tops if necessary.

9. Brush the tops of each cake layer with the cherry liqueur or cherry brandy.

10. Place one cake layer on a serving platter and spread a layer of whipped cream over the top. Then spoon the cherry filling over the whipped cream.

11. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.

12. Garnish the cake with chocolate shavings and maraschino cherries.

13. Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld together.
